The Vegie Bar, A Gem For Vegans

Hello guys,

It has been a super busy couple of weeks and although I still managed to cook at home, I haven’t got the chance to actually take pictures of me cooking. And not to mention, EXAM period is here! Therefore, I have decided to visit my favorite vegan restaurant in Melbourne, The Vegie Bar 🙂

Okay, I’m gonna go straight up and say, I am not a vegan. However, I am trying to consume less meat cause it makes me feel better physically and emotionally. Sadly, Vegan foods are very prominent with the sightings of greens and only greens. In addition, lots of quick and fun recipes videos in Facebook and YouTube which consists of bacon, butter, and cheese have made it tougher for people to start living a healthier life.

Enough with my rambling, this restaurant is no doubt one of the best Vegan restaurant in Melbourne! As soon as you enter this vegans’ holy grail, you will be greeted by the friendly staffs wearing colourful and Fitzroy-esque outfit.

Ladies and Gentlemen, boys and girls, I am back from the dreaded slump of assignments! Today, we are kicking it off with not an ordinary way to cook pasta. As we know, Italians have myriad number of uber intricate ways to cook their mouth-watering meals. But come on, there are days when you’re craving for a good pasta but your bank account and assignments tell you that restaurant is a no go.

However, when I was browsing through the web not doing my assignments as usual, I found this one-pot-pasta by one of my favorite ladies, Martha Stewart! This recipe is quick and easy, but the flavor is not compromised aka superbly tantalizing. Basically, you can just dump all the ingredients into a pan and voilà! All done, pronto! Fried Rice Without Rice (What?!)

Fried Rice without rice? Are you insane?! I know, I know. All of you may think that I’m crazy but yeah nope I am not. My mother had me tested (The Big Bang Theory fan over here!)
Back to the topic. The rice for this fried rice is actually made of cauliflower and it is just as good as conventional fried rice! In fact, it is even better because it is nearly carb-less. I’ve even added a special ingredient which is… Sambal Petai (Sambal Olek) from Jakarta which is HEAVENLY.

Roasted Garlicky Sweet Potatoes

Craving for Potatoes? Why not try Sweet Potato instead? It is packed with powerful nutritional punch. For instance, sweet potatoes have more Fiber, Vitamin A, and Vitamin C. It is also lower in calories and rich in antioxidants!

But hold on… What can we do with Sweet Potato? ROAST IT OF COURSE!

Ingredients:

1  Golden Sweet Potato (peeled and diced)

1/4 Onion ( I used Red Onion)

1 Tbsp Olive Oil

1 Tsp Smoked Paprika

2 Tsp Garlic Powder

Salt and Pepper to taste

Directions:

  1. Preheat your oven to 200 C (392 F)
  2. Spread Sweet Potatoes and Onions to baking tray lined with baking paper
  3. Pour out Olive Oil
  4. Dust with dry ingredients together with salt and pepper
  5. MIX WITH YOUR CLEAN HANDS (It tastes better that way)
  6. Put inside oven and wait patiently for 25 Mins
  7. Ding Dong! Let it cool and ENJOY!

That’s it! Easy Peasy as aforementioned! Add some greens and meats or mushroom and you’ll have a delicious lunch or dinner. Voila!

Baked Salmon with Greens and Sweet Potatoes

I have always been a big fan of Salmon. The combination of the crispy flavourful skin combined with the juicy and succulent pinkish meat lingering inside your mouth. Ah so good!
This time round, I am combining this fish with something sweet which is the Sweet Potato and also something savoury and fresh which is the sautéed Kale and Cabbage. Best. Combination. Ever.

Let’s get right into the Ingredients, shall we?

1 Piece of Fresh Skin On Salmon
1 1/2 Cup of Fresh Vegies
1/2 Sweet Potato (Peeled and Diced)
1/2 Red Onion (Sliced)
2 Tbsp Coconut Oil or Olive Oil

Salt, Pepper, Smoked Paprika, and Garlic Powder to taste

Directions:
1. Preheat oven to 200 C (392 F)
2. Mix together Red Onion, Sweet Potatoes and the spices with a drizzle of oil
3. Put inside the oven, set to 30 mins
4. Rub Salmon with spices until well coated
5. Heat the oil in the pan and Pan Fry Salmon skin side down for about a minute, keeping an eye on the skin side every 30 seconds or so
6. Flip the Salmon and let it cook on the other side for a minute
7. Transfer Salmon to the oven together with the sweet potatoes
8. Start sauté-ing your greens
9. Plate everything together and Enjoy!
